Shrimp fra Diavolo

Shrimp fra Diavolo

Ingredients:

  • 1/4 c. drained sun-dried tomatoes in oil, julienned
  • 2 cloves garlic, chopped
  • 1/4 to 1/2 tsp. crushed red pepper
  • 1 pkg pasta of choice
  • 2 cans of rotel or similar
  • 1 lb. fresh or frozen (thawed) shelled and deveined Ig.raw shrimp
  • 1 1/2 c. loosely packed fresh basil
  • Shredded Parmesan for serving

How to:

Start pot of water for pasta on high, turn skillet on med-high  once pan is hot add sun-dried tomatoes, garlic, and red pepper flakes, cook about 1 minute.

Add pasta to water and good to desired tenderness, while cooking pasta add tomatoes to pan, heat to boiling, add shrimp, cooked 3 min per side or until cooked thru. Add basil to sauce.

Drain noodles, cover with sauce, add shredded Parmesan and enjoy! You can combine all in one dish but I prefer sauce on top to liking.
