makes 1 loaf, prep time 5 minutes cook time 50 minutes.
ingredients:
- 1¼ cups All-Purpose Flour
- 2 teaspoons baking powder
- 1½ teaspoons ground cinnamon
- ½ teaspoon salt
- 2 large eggs, at room temperature
- 1 cup sugar
- 1 cup mashed bananas(about 1 ½ to 2 ripe bananas)
- 2 teaspoons pure vanilla extract
- ½ cup vegetable oil
how to:
- Preheat the oven to 350°F.
- Grease an 8½-inch by 4½-inch loaf pan with nonstick cooking spray. in a large bowl, whisk together the flour, baking powder, cinnamon and salt.
- In a small bowl, whisk together the eggs, sugar, bananas, vanilla and oil.
- Stir the wet ingredients into the dry until just combined.
- Transfer the batter to the prepared pan. Bake until golden and a toothpick inserted in the center comes out dry, about 50 minutes.
- Let cool completely in the pan set on a wire rack.
