mom’s wonderful banana bread

makes 1 loaf, prep time 5 minutes cook time 50 minutes.


  • 1¼ cups All-Purpose Flour
  • 2 teaspoons baking powder
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon salt
  • 2 large eggs, at room temperature
  • 1 cup sugar
  • 1 cup mashed bananas(about 1 ½ to 2 ripe bananas)
  • 2 teaspoons pure vanilla extract
  • ½ cup vegetable oil

how to:

  1. Preheat the oven to 350°F.
  2. Grease an 8½-inch by 4½-inch loaf pan with nonstick cooking spray. in a large bowl, whisk together the flour, baking powder, cinnamon and salt.
  3. In a small bowl, whisk together the eggs, sugar, bananas, vanilla and oil.
  4. Stir the wet ingredients into the dry until just combined.
  5. Transfer the batter to the prepared pan. Bake until golden and a toothpick inserted in the center comes out dry, about 50 minutes.
  6. Let cool completely in the pan set on a wire rack.
