nothing beats mom’s old style Manhattan Clam Chowder on a cold winter night!
Ingredients:
- 3 slices bacon, diced
- 1 t thyme plus ½ set aside
- 1 cup diced onion
- 3 cups cubed potatoes
- 1/2 cup diced celery
- 5 cups hot water
- 2 t. Salt
- ½ t pepper
- 2 can diced tomatoes
- 1 ½ c diced carrots
- 2 cans chopped clams, reserve liquid
- 2 bottle clam juice
- 1 T minced parsley
How to:
Sautée bacon in pot until crisp stirring occasionally, stir in thyme and onions, cook until tender , stirring occasionally. Add potatoes, celery, water, salt, and pepper cover and simmer 5 min. Add tomatoes and carrots and clam liquid, simmer uncover over low heat 1 hour. Add parsley, remainder of thyme and clams, bring to boil, let simmer 10 min. Salt and pepper to taste.
