beef stroganoff

easy to make, dairy free. your family will love it.

Ingredients:

  • 1 ½ pounds lean beef (top sirloin or similar) thin sliced into straps
  • ½ pound sliced mushrooms
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon all-purpose flour
  • 1 cup beef stock, preferably unsalted or low sodium
  • 2 tablespoon extra-virgin olive oil divided in half
  • ½  medium onion, sliced ¼-inch-thick lengthwise
  • 3 tablespoons sour cream, at room temperature(can be omitted if dairy free)
  • 1 teaspoon minced garlic
  • 1 tablespoon Dijon
  • 1 tablespoon cognac
  • 9 oz  box jovial egg tagliatelle or egg noodles of choice

Directions:

Prepare noodles according to package.

Heat medium pan on medium high, add 1 tablespoon extra Virgin olive oil then add onions, mushrooms, and garlic, saute until onions are translucent and mushrooms are soft, set aside.

Add other tablespoon of olive oil then add beef, salt, and pepper, saute just until browned, remove from pan.

Without cleaning pan add broth and cognac and bring to boil, add flour and whisk to mix, will thicken quickly, add dijon and sour cream, whisking together, finally add beef and veggies back into pan.

Let simmer to heat through, serve over noodles.
