Spring Salad with Leftover Chicken
Ingredients:
- 5 oz container baby greens or “Spring” salad mix
- Dried sweetened cranberries
- Pecan halves
- 1 scallion or green onion
- 1 tomato
- Chicken thigh or other leftover meat
Equipment:
- Cutting board
- Knife
How to:
Slice up the spring onion, tomato and chicken. Heap baby greens on large plate. Sprinkle over with spring onion, tomato, cranberries, pecans and chicken pieces. Drizzle with olive oil and balsamic vinegar. Done!
