Simple Side Salad for Two


  • 5 oz container baby arugula
  • 5 oz container baby mixed greens
  • 5 baby carrots
  • 5 sweet peppers
  • 2 green onions
  • 1 medium sized tomato
  • Cherry tomatoes
  • Authentic Italian Dressing


  • Kitchen knife
  • Cutting board

How to:

Slice the baby carrots lengthwise into halves or quarters.  Open and remove the seeds and pith from the sweet peppers and slice. Slice the green onions and tomato. Halve the cherry tomatoes. Layer greens on dinner plates. Spread over with carrots, peppers, green onions and tomatoes. Drizzle with Authentic Italian Dressing.

I used a golden tomato here from my sister’s garden and bright red cherry tomatoes from ours. Such yummy colors!
