Simple Greens


  • 1 bunch fresh kale, collards or chard
  • 2 tsp butter, ghee or coconut oil
  • Salt or garlic salt


  • Large salad or mixing bowl
  • Kitchen knife
  • Cutting board
  • Large pot with steamer basket
  • Medium size mixing bowl
  • Tongs or fork

How to:

Set a large bowl in the sink and fill with cool water.

Swish the greens through the water. This will loosen the dirt off of them. Discard the water, refill the bowl with water and swish the greens again. Repeat the whole process once more. Shake water off the greens, lay them together on the cutting board and roll them up lengthwise.

Slice thinly crosswise with sharp kitchen knife.

Where the stem is thick, run the knife along the stem to scrape off the leaf and discard the stem. Place greens in the steamer basket over boiling water for 5-10 minutes, depending on how crisp or soft you prefer your greens.

Drain and toss with the butter in a medium size bowl. Sprinkle with salt.
