Seriously Good Quinoa Salad – Inspired Taste Review
I tried this recipe, using what I had on hand, and here is what it looked like:
As to taste? Scrumptious! Quinoa, paired with black beans (the recipe says chickpeas or other beans), rounded out with a bright array of vegetables, nuts, seeds and dried fruit, and dressed with a tangy/salty/sweet dressing. The salad came together easily. It calls for fresh herbs, but I didn’t have any. I’m not missing them, but can see that adding fresh chopped parsley, dill or mint would amp up the summery crispness factor considerably!
