Chewy Snack Bars

Chewy Snack Bars Amended

These are a lot like the Coconut Candy Bars, but are baked, and thus can be carried with you to get through a long morning or afternoon.


  • 3 cups unsweetened shredded coconut
  • 1/4 cup fine almond flour
  • 1/4 cup whey protein powder
  • 1/4 tsp salt
  • 1 tbsp coconut oil
  • 1 large egg, lightly beaten
  • 1 cup almond butter
  • 2 tsp vanilla
  • 1/2 cup unsweetened nut milk
  • 1 cup mini dark chocolate chips
  • 1/2 cup chopped walnuts


  • Large mixing bowl
  • 1 or 2 cup Pyrex measuring cup
  • Dry weight measuring cups
  • Measuring spoons
  • Whisk
  • Mixing spoon
  • 9 x 12 baking pan
  • Parchment paper
  • Cooling rack
  • Knife

How to:

Preheat oven to 350 degrees. Line baking pan with parchment paper. Whisk the first four ingredients together in the mixing bowl. Put 1 tbsp coconut oil in Pyrex measuring cup, and microwave until melted, about 20 seconds. Pour into the mixing bowl. Measure the almond butter in the oily Pyrex cup (it will slip out easier) and add to the bowl. Lightly beat the egg in the Pyrex cup and add to the bowl. Add the vanilla and nut milk. Work everything with a mixing spoon till mixed. It will form a stiff dough. Mix in the chips and walnuts. You may have to use your hands. Press into the baking pan. Bake for 25 minutes. Edges should be lightly browned. Remove and cool pan on cooling rack, about an hour. Cut into squares or rectangles. Store in airtight container on the countertop or in the fridge.
