Chewy Snack Bars
These are a lot like the Coconut Candy Bars, but are baked, and thus can be carried with you to get through a long morning or afternoon.
Ingredients:
- 3 cups shredded coconut
- ½ cup fine almond flour
- ½ cup refined coconut oil
- 1 cup almond butter
- 1 large egg
- ¼ tsp salt
- 2 tsp vanilla
- ¼ cup nut milk
- 1 cup mini dark chocolate chips
- ½ cup chopped walnuts
Equipment:
- Large mixing bowl
- Wooden spoon
- Pyrex measuring cup
- Measuring spoons
- 9 x 13 baking pan
- Parchment paper
How to:
Preheat oven to 350 degrees. Line baking pan with parchment paper. Measure shredded coconut and almond flour into mixing bowl. Place coconut oil in pyrex measuring cup and microwave for about 50 seconds. Pour into mixing bowl. Measure almond butter in the oily pyrex cup (it will slip out easier) and add to bowl. Add egg, salt, vanilla and nut milk. Stir until blended. It will form a stiff dough. Mix in chocolate chips and walnuts (you might need to use your hands). Using fingers, press evenly into lined baking pan and bake for 25 minutes. The edges should be lightly browned. Place pan on rack and cool completely. Cut into squares. Store in airtight container on the counter or in the fridge.
