I am not a great cook or baker and the fatigue from MS makes it worse, but I do love the yummy foods that are around in the fall. This weekend I tried a "muffin" recipe that was delicious and easy enough for almost anyone to slap together. I thought I would share it here:

Here goes, my weekend culinary masterpiece
- 1 box Spice Cake Mix (you could really use ANY type of mix- yellow, chocolate, etc. but I was wanting a good fall flavor).
- 1 can pumpkin (once I get pumpkins at home I will sub fresh, but the canned works wonderfully. I prefer Libby's)
- A dash of Pumpkin Pie Spice (optional)
- Mix well- it will be thick
- Bake at 350 for 25 minutes
- Enjoy!
