    Skillet Breakfast

    Ingredients
    12 slices bacon, cut into 1/2-inch pieces
    1 medium potato, peeled, cut into small cubes
    2 green onions with tops, thinly sliced
    1/2 teaspoon chili powder
    4 eggs, beaten

    Directions
    1 Place bacon and potato in nonstick skillet.
    2 Cook on medium heat about 12 minutes, stirring frequently until potatoes are fork tender.
    3 Stir in onion and chili powder; pour eggs evenly over mixture.
    4 Cover.
    5 Turn heat to low and cook 5 minutes more, or until mixture is set.
    6 Cut in wedges to serve.

    MAKES 4 servings
