    Roasted Rosemary Potatoes

    Ingredients
    1-1/2 pounds medium new potatoes, scrubbed and cut into 1-inch cubes
    4 Tablespoon olive oil
    1 clove garlic, thinly sliced
    1 teaspoon minced fresh rosemary OR 1/2 teaspoon dried rosemary
    salt and freshly ground black pepper

    Directions
    1 Heat oven to 400 degrees.
    2 Toss potatoes, olive oil, garlic, and rosemary in a 13x9-inch baking dish.
    3 Roast 1 hour, or until evenly browned and crisp, carefully turning potatoes and rearranging every 20 minutes.
    4 Season with salt and pepper.
    5 Serve at once.

    MAKES 4 servings
