    Portugese Bean Soup

    Ingredients
    1 cup dry kidney beans
    2 quarts water
    3 onions, sliced
    2 garlic cloves, minced
    1/4 cup bacon fat
    6 potatoes, diced
    2 bay leaves
    1 teaspoon ground all-spice
    8-ounce can tomato paste

    Directions
    1 Place beans and water in kettle and bring to boil.
    2 Remove from heat; let stand 1 hour.
    3 Bring to boil again and simmer, covered, about 1-1/2-hours or until beans are tender.
    4 Cook onions and garlic in bacon fat until lightly browned.
    5 Add, with remaining ingredients, to beans; simmer covered, another 1-1/2 hours.
    6 Season to taste.

    MAKES 3 quarts
