Ingredients
1 cup butter flavored shortening
2 cups brown sugar
1 cup crunchy peanut butter
4 egg whites, beaten
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
2 cups crisp rice cereal
1-1/2 cups chopped peanuts
1 cup quick oats
1 cup flake coconut
Directions
1 Heat oven to 350 degrees.
2 Combine shortening, sugar, and peanut butter in large bowl.
3 Beat at medium speed of electric mixer until blended.
4 Beat in egg whites and vanilla.
5 Combine flour, baking soda, and baking powder.
6 Mix into creamed mixture at low speed until just blended.
7 Stir in, one at a time, rice cereal, nuts, oats, and coconut with spoon.
8 Drop rounded Tablespoonfuls 2 inches apart onto ungreased baking sheet.
9 Bake 8 to 10 minutes or until set.
