    Macaroni and Cheese with Tomatoes

    Ingredients
    3 large tomatoes
    8-ounce package elbow macaroni
    1/4 cup margarine
    1/4 cup flour
    2 cups milk
    1 teaspoon salt
    Dash ground white pepper, optional
    3-1/2 cups shredded Cheddar cheese, divided

    Directions
    1 Dice tomatoes to make 1 cup; slice remaining tomatoes.
    2 Preheat oven to 400 degrees.
    3 Cook macaroni according to package instructions; rinse and drain.
    4 Melt butter in saucepan.
    5 Blend in flour.
    6 Stir in milk, salt, and white pepper.
    7 Cook and stir until thickened, 2 to 3 minutes.
    8 Stir in 1-1/2 cups cheese; heat until melted.
    9 Combine macaroni, cheese sauce, diced tomatoes, and 1-1/2 cups uncooked cheese.
    10 Top with sliced tomatoes and remaining 1/2 cup cheese.
    11 Bake, covered, 10 minutes.
    12 Remove cover and bake until cheese melts.

    MAKES 6 servings
