    Low-Fat Bran-Apple Muffins

    Ingredients
    1 cup buttermilk
    1 cup bran cereal shreds
    1 teaspoon baking soda
    1/2 cup packed brown sugar
    2/3 cup pitted prunes
    3 Tablespoons water
    2 large egg whites
    1 Tablespoon molasses
    1 cup flour
    1 cup peeled and grated apple
    1/4 teaspoon salt

    Directions
    1 Preheat oven to 375 degrees.
    2 Coat twelve medium muffin tins with vegetable cooking spray.
    3 In small bowl, combine buttermilk, bran and baking soda; set aside.
    4 Combine pitted prunes and water in container of food processor; pulse on and off until prunes are finely chopped.
    5 In mixer bowl, cream sugar and prune puree; beat in egg whites and molasses.
    6 Stir in buttermilk mixture, flour, apple, and salt to blend thoroughly.
    7 Spoon into prepared muffin tin cups, dividing equally.
    8 Bake about 20 minutes, until pick inserted int centers comes out clean.

    MAKES 12 muffins
