    Low Country Corn Pie

    Ingredients
    2 Tablespoons butter OR margarine
    1/2 cup onion, chopped
    1/2 cup chopped bell pepper
    4 eggs
    2 cups milk OR light cream
    8 ounces chunk-style imitation crab meat
    2 cups frozen whole kernel corn. thawed
    1/4 teaspoon white pepper
    1/2 cup grated Cheddar cheese

    Directions
    1 Preheat oven to 350 degrees.
    2 Butter 9x9x2-inch baking dish.
    3 Melt butter in 10-inch skillet.
    4 Saute' onion and pepper over medium heat 5 minutes.
    5 In mixing bowl, beat eggs until foamy, then beat on milk.
    6 Stir in sauteed vegetables, seafood, corn, salt, and pepper.
    7 Pour in baking dish, sprinkle with cheese.
    8 Bake 25 to 30 minutes, or until barely set and knife inserted in center comes out clean.
    9 Let stand at room temperature 10 minutes.

    MAKES 6 servings
