    Jambalaya

    Ingredients
    3 pounds chicken pieces
    Salt and pepper
    3 Tablespoons bacon drippings
    2 cups sliced celery
    2 cups sliced green onions
    1 cup chopped bell pepper
    1 cup uncooked rice
    2 cups boiling chicken broth
    1 clove garlic, minced
    1/4 teaspoon red pepper

    Directions
    1 Season chicken with salt and pepper.
    2 Brown on all sides in drippings in large ovenproof skillet or Dutch oven.
    3 Remove chicken; set aside.
    4 Pour off all but 2 Tablespoons drippings.
    5 Add celery, onion, and green pepper to skillet.
    6 Cook until tender.
    7 Stir in rice, broth, and seasonings.
    8 Return chicken to pan.
    9 Cover and bake 30 minutes at 375 degrees until chicken is tender.
    10 Fluff with a fork.
    11 Adjust seasonings, if necessary.

    MAKES 6 servings

    THIS IS ONE I HAVE TO TRY! Do you think I can cook this in my crock pot or slow cooker?

      I would think that after slightly browning meat first then putting it all in slow cooker....it should work. Seems logical to me. Retha suggests 8 to 10 hours in crock pot on low.

      If anyone tries this...or any other recipes...please send in your findings and opinions.
