    Grandma's Blintz Pancake

    Ingredients
    3 eggs
    1/3 cup low-fat milk
    1/4 cup cottage cheese
    1/4 cup all-purpose flour
    1 Tablespoon sugar
    1/2 teaspoon vanilla
    1/4 teaspoon ground cinnamon
    1 Tablespoon butter
    Confectioners' sugar, optional
    Strawberry, cherry, or other fruit preserves, optional

    Directions
    1 In preheated 425-degree oven, melt butter in 10x6x2-inch baking dish or 9-inch pie plate.
    2 Spread butter to coat bottom of dish.
    3 Set aside.
    4 Place eggs, milk, cottage cheese, flour, sugar, vanilla, and cinnamon in blender container.
    5 Cover and blend at high speed until smooth.
    6 Pour into hot buttered pan.
    7 Bake until golden brown and sides are puffy, about 20 minutes.
    8 Sprinkle with confectioners' sugar and serve immediately with preserves, if desired.

    MAKES 8 servings
