    Citadel Hill Chowder

    Ingredients
    1 pound frozen haddock OR cod fillets
    3 strips bacon, diced
    1/4 cup chopped onion
    1 cup frozen hash browns
    17-ounce can cut corn and juices
    2 Tablespoons pimiento, optional
    2 cups milk
    1 teaspoon salt
    1/4 teaspoon pepper

    Directions
    1 Let fish stand at room temperature 20 minutes.
    2 Cut into 1-inch cubes.
    3 In 2-1/2-quart saucepan, cook bacon with onion until bacon is crisp.
    4 Add potatoes, corn and liquid, milk, and pimiento.
    5 Simmer 5 minutes.
    6 Add fish and cook until fish is opaque and flakes easily when tested with a fork, about 15 to 20 minutes.

    MAKES 4 servings
