    Chocolate Peanut Crisp Squares

    Ingredients
    1 stick PLUS 7 Tablespoons unsalted butter, softened
    1/3 cup sugar
    1/3 cup cocoa powder
    1-3/4 cups flour
    1 egg
    1 teaspoon vanilla
    1/2 cup packed light brown sugar
    1/3 cup corn syrup
    1/3 cup heavy cream
    2 cups dry-roasted unsalted peanuts
    6 ounces semi-sweet chocolate chips

    Directions
    1 In food processor, mix 1 stick plus 3 Tablespoons butter, sugar, and cocoa until blended.
    2 Add flour; process until blended.
    3 Add egg and vanilla; process until dough clings together.
    4 Press in bottom of foil-lined 10x15-inch pan.
    5 Prick with fork.
    6 Bake at 350 degrees 12 minutes, or until dry and set.
    7 In a saucepan, combine remaining butter, brown sugar, corn syrup, and cream; mix well.
    8 Heat to boiling.
    9 Stir in nuts.
    10 Spread over partially baked crust.
    11 Bake 15 minutes, or until bubbly.
    12 Sprinkle chocolate chips on top, but do not spread.
    13 Let cool in pan.

    MAKES 5 dozen
