    Chocolate-Mint Mousse

    Ingredients
    6-ounce package semi-sweet chocolate morsels
    1/2 cup hot brewed coffee
    4 eggs, separated
    1/2 teaspoon peppermint extract
    1/4 teaspoon cream of tartar
    4 Tablespoons sugar

    Directions
    1 Place morsels in blender container.
    2 Blend at medium speed 10 seconds.
    3 Scrape down sides of blender container with rubber spatula.
    4 Add coffee.
    5 Blend at medium speed 5 seconds.
    6 Add egg yolks and extract.
    7 Blend at medium speed 15 seconds or until smooth.
    8 In mixing bowl, beat egg whites and cream of tartar until soft peaks form.
    9 Add sugar 1 Tablespoon at a time, beating constantly until sugar is dissolved and whites stand in stiff, glossy peaks.
    10 Fold chocolate mixture into meringue.
    11 Refrigerate until set.

    MAKES 2 cups
