Ingredients
4 chicken breast halves, boned and skinned
1/2 cup chopped onion
1 Tablespoon vegetable oil
16-ounce jar meatless spaghetti sauce
1-1/4 cups water
1 green pepper cut into short, thin strips
1/2 teaspoon crushed oregano
1/2 teaspoon crushed basil
1-1/2 cups instant rice
Directions
1 Cut chicken into 1-inch pieces.
2 Saute chicken and onion in oil in skillet until lightly browned.
3 Add remaining ingredients except rice; mix well.
4 Bring to a boil; stir in rice.
5 Cover and remove from heat.
6 Let stand 10 minutes or until liquid is absorbed and rice is tender.
