    Bean and Sausage Soup 2

    Ingredients
    2 slices bacon
    1/2 cup chopped onion
    1 cup sliced carrots
    1 cup cubed peeled potato
    1/4 cup chopped fresh parsley
    1/4 teaspoon pepper
    2 cups water
    8 ounces thinly sliced smoked bratwurst
    14-1/2 ounce can cut green beans, undrained
    15-1/2 ounce can Great Northern beans, undrained

    Directions
    1 In large saucepan, cook bacon until crisp.
    2 Drain, reserving 1 Tablespoon drippings.
    3 Crumble bacon; set aside.
    4 Cook and stir onion in reserved drippings until tender.
    5 Add carrot, potato, parsley, pepper, and water; bring to a boil.
    6 Reduce heat; cover and simmer 20 minutes or until vegetables are tender.
    7 Add bratwurst, beans and reserved bacon.
    8 Cook until thoroughly heated.

    MAKES 6 servings
