    Bean and Sausage Soup

    Ingredients
    1/3 cup water
    1/4 cup instant minced onion
    1 Tablespoon instant minced garlic
    2 Tablespoons oil
    28-ounce can crushed tomatoes in puree
    9-ounce can cannellini {white kidney} beans, rinsed and drained
    13-3/4-ounce can chicken broth
    8 ounces kielbasa, cut in 1/4-inch thick sliced
    2 bay leaves

    Directions
    1 Combine water, onion, and garlic in a measuring cup; set aside 10 minutes to soften.
    2 Heat oil until hot in a skillet.
    3 Add onion and garlic mixture; cook and stir until tender, about 4 minutes.
    4 Add tomatoes, beans, chicken broth, sausage, and bay leaves.
    5 Simmer, uncovered, to blend flavors, 15 to 20 minutes.
    6 Remove bay leaves.

    MAKES 4 servings
