Ingredients
2 boneless, skinless chicken breast halves
3 Tablespoons soy sauce
15-ounce can garbanzo beans, rinsed, drained
8-ounce can whole kernel corn, drained
1 bell pepper, chopped
1/3 cup minced parsley
1/4 cup minced onion
2 Tablespoons olive oil
1-1/2 Tablespoons balsamic vinegar
1/4 teaspoon garlic powder
Directions
1 Simmer chicken in mixture of 2 cups water and 1 Tablespoon soy sauce in covered saucepan 12 to 15 minutes or until tender.
2 Remove from liquid and cool.
3 Shred meat with fingers into large serving bowl; combine with beans, corn, bell pepper, parsley, and onion.
4 Cover and refrigerate until thoroughly chilled.
5 Blend remaining 2 Tablespoons soy sauce, oil, vinegar, and garlic powder in jar with screw top lid.
6 Just before serving, shake dressing sell and add to chicken mixture; toss to coat all ingredients.
