    Bacon and Cornbread Muffins

    Ingredients
    1 cup self-rising corn meal mix
    1 cup sifted self-rising flour
    3 Tablespoons sugar, optional
    1 egg
    1 cup buttermilk
    1/4 cup vegetable oil
    8 strips bacon, cooked and crumbled

    Directions
    1 Preheat oven to 425 degrees.
    2 Grease muffin cups.
    3 Stir together corn meal, flour and sugar, if desired, in mixing bowel.
    4 Beat egg in separate bowel; stir in buttermilk and oil.
    5 Add liquid mixture to dry ingredients, stirring just until blended.
    6 Stir in crumbled bacon.
    7 Spoon batter into prepared muffin cups, filling each 2/3 full.
    8 Bake 15 to 18 minutes or until golden brown.

    MAKES 12 muffins
