    Applesauce Cupcakes

    Ingredients
    1/3 cup margarine
    1 cup sugar
    1 egg
    1 cup unsweetened applesauce
    2 cups flour
    1 teaspoon baking soda
    1/4 teaspoon salt
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/8 teaspoon ground cloves
    1/2 cup chopped nuts, optional
    1/2 cup chopped dates OR raisins, optional

    Directions
    1 Preheat oven to 350 degrees.
    2 Place 12 cupcake papers in muffin pan.
    3 In medium bowel, cream margarine and sugar using electric mixer; add egg and applesauce and beat well.
    4 Mix dry ingredients together and add to cream mixture; continue beating until all ingredients are well-blended.
    5 Stir in nuts and dates.
    6 Portion batter into cupcake papers.
    7 Bake 18 to 20 minutes or until top of cupcakes spring back when lightly touched.
    8 If desired, dip top of cooled cupcakes in mixture of cinnamon and sugar.

    MAKES 12 cupcakes
