    Apple Plenty Cake

    Ingredients
    3 eggs
    1-1/2 cups oil
    2 cups sugar
    3 cups flour
    1 teaspoon salt
    1 teaspoon baking soda
    4 cups chopped, peeled apples
    1 cup black walnuts, chopped
    2 teaspoons vanilla extract
    1 cup brown sugar
    1/4 cup milk
    1/2 cup butter

    Directions
    1 Preheat oven to 350 degrees.
    2 Mix eggs, oil and sugar; blend well.
    3 Sift flour, salt, and baking soda together; add to egg mixture.
    4 Add apples, nuts, and vanilla.
    5 Pour batter into greased tube or Bundt pan.
    6 Bake 1 hour.
    7 Remove from oven.
    8 In saucepan, combine brown sugar, milk, and butter; cook 2-1/2 minutes after mixture comes to a boil.
    9 While cake is still hot, pour glaze over cake in pan.
    10 Cool completely before removing from pan.

    MAKES 18 servings

    Hmm ..

    I have several pear trees, and they will be bearing fruit in the following month. I never can find enough ways to use them all. I wonder how this would work using pears instead of apples?
