Ingredients
2 Tablespoons butter
1/4 cup chopped pecans
4 eggs
1/3 cup firmly packed brown sugar
1/2 cup milk
1/4 teaspoon ground cinnamon
4 slices day-old wheat bread, cubed
1-1/2 cups shredded cored cooking apples (about 2 small)
whipping cream, optional
Directions
1 Place butter and pecans in 9-inch pie plate.
2 Bake in preheated 400 degree oven, stirring occasionally, until lightly browned, about 6 to 8 minutes.
3 In large mixing bowel, beat together egg, sugar, milk and cinnamon.
4 Gently stir in bread, apples and toasted pecans and butter.
5 Pour into pie plate.
6 Reduce oven temperature to 325 degrees.
7 Bake until knife inserted near center comes out clean, 20 to 25 minutes.
8 Serve hot, warm or chilled topped with whipped cream, if desired.
