    Apple Chiffon Cake

    Ingredients
    1/3 cup oil
    3/4 cup sugar
    2 eggs
    3/4 cup all-purpose flour
    1/2 teaspoon baking powder
    1/4 teaspoon salt
    1/4 teaspoon baking soda
    1/4 teaspoon nutmeg
    1/4 teaspoon ginger
    1 cup chopped apple
    2 Tablespoons sugar
    2 Tablespoons chopped walnuts
    1/2 teaspoon cinnamon

    Directions
    1 Heat oven to 350 degrees.
    2 Combine oil and 3/4 cup sugar in large bowel at medium speed of electric mixer.
    3 Add eggs.
    4 Beat well.
    5 Combine flour, baking powder, salt, baking soda, nutmeg, and ginger.
    6 Add to oil mixture.
    7 Beat until just blended.
    8 Stir in apples.
    9 Spread evenly into ungreased 9x9x2-inch pan.
    10 Combine 2 Tablespoons sugar, nuts and cinnamon.
    11 Sprinkle over batter.
    12 Bake 25 to 30 minutes or until wooden pick inserted in center comes out clean.

    MAKES 12 servings
