1 very ripe plantain
1 egg
1 blob coconut oil- not melted
dash salt
1/4 to 1/2 teaspoon baking powder
5 drops lemon oil- not extract- harder to find but essential and so worth it
splash coconut milk
Whirl plantain in food processor, add all other ingredients except for the coconut milk- whirl, add coconut milk, whirl. If you want crepes add more milk, pancakes, less. I cooked them individually in a ceramic coated frying pan set just below medium. They are sugar free and delicious. Donīt even need syrup and I am a maple syrup fan.
