Ingredients
1 cup butter or margarine
1/2 cup firmly packed light brown sugar
1 egg
2 Tbsp lemon juice
1/2 tsp vanilla
1 tsp grated lemon rind
2 cups flour
1/2 tsp soda
1/2 cup chopped nuts
1/2 cup shredded coconut
Directions
1-Beat together butter and sugars until light and fluffy; blend in egg, lemon juice, lemon rind and vanilla.
2-Combine flour, soda, salt and add to creamed mixture, mix well.
3-Spread batter into greased 15-1/2x10-1/2-inch jelly roll pan.
4-Combine nuts and coconut; sprinkle over batter, bake in 350 degree F oven for 20 to 25 minutes or until golden brown.
5-Cool thoroughly; cut into squares.
