    Apple walnut kale salad

    Apple walnut kale salad

    1 tbsp cider vinegar
    ½ tsp sea salt
    ½ tsp black pepper
    ½ tsp light brown sugar
    4 cups torn kale (any kind, I use red)
    2 cups torn Swiss chard
    1 cup sliced Granny Smith apple
    ½ cup sliced celery
    ½ cup sliced red onion
    1 ounce small cubed or grated smoked Gouda cheese
    2 tbsp toasted walnuts

    Combine the first four ingredients. Add kale and chard, toss, and let stand ten minutes. Add the apples, celery, onions, cheese, and toasted walnuts to the greens and toss.

    Serves 6.
