    Biscuit Mix

    Ingredients
    8 cups flour
    1/4 cup baking powder
    4 tsp salt
    1 cup shortening

    Directions
    1-Sift and measure flour.
    2-Add salt and baking powder to flour and sift together.
    3-Cut in fat until mixture is like cornmeal.
    4-For buttermilk biscuits, use 2 tsp soda and 1 Tbsp baking powder instead of the 1/4 cup baking powder in the biscuit recipe.
    5-Mix may be used for biscuits, dumplings, short cakes, waffles, pancakes and other quick breads.

    Biscuits
    TO USE:
    1-Add about 3/4 cup milk to 2 cups mix.
    2-Stir about 20 strokes until soft dough is formed.
    3-Turn out on lightly floured and knead lightly 15 strokes.
    4-Roll out and cut.
    5-Bake on ungreased baking sheet at 425 degree F for 10 to 12 minutes

    Pancakes
    Ingredients
    2 cups biscuit mix
    2 Tbsp melted shortening or cooking oil
    2 eggs, beaten
    1 cup milk

    Directions
    1-Combine eggs, shortening and milk.
    2-Add to mix and blend well.
