    Strawberry Icebox Cake

    2lbs fresh strawberries
    2Tbsp sugar
    3 cups heavy whipping cream
    1/3c confectioner's sugar
    1tsp vanilla extract
    27 whole graham crackers (nabisco plain is the best)

    1) Wash, hull & slice the fresh strawberries
    2)Sprinkle strawberries with sugar,mix, allow to sit for 15 min
    3) Whip cream until stiff peaks form, then add
    confectioner's sugar & vanilla extract. Whip again briefly
    to combine.
    4) In baking dish, spread small amount of whipped cream
    Begin layering, starting with graham crackers, then
    layer of strawberies, then layer of whipped cream.
    continue until you have 3 to 4 layers and ending
    with whipped cream.

    Cover it and let sit in refrigerator for at least 4 hours, for juices to soften crackers.

    Cut into squares, Put a strawberry on top. ENJOY!

    This was a hit and my house and the kids will love it!
