    White and Yellow Turnips

    Ingredients
    1 pound yellow turnip, peeled and cut into 3/8-inch cubes
    ½ pound white turnips, peeled and cut into 3/8-inch cubes
    4 cups boiling water
    1½ tsp. butter
    2 slices bacon, finely chopped
    ¼ cup finely chopped onion
    ½ tsp. salt
    Dash of white pepper
    1 cup water
    Chopped parsley, for garnish
    Directions
    1-In large saucepan, heat about 4 cups water to boil.
    2-Add turnips and boil 1 minute.
    3-Drain and set aside.
    4-In large skillet, melt butter.
    5-Add bacon and cook until bacon is almost crisp.
    6-Add onion and continue cooking until onion is tender but not browned.
    7-Add the blanched, drained turnips, salt and pepper.
    8-Pour in 1 cup water.
    9-Cover and simmer over medium high heat until most of the liquid is absorbed and turnips are tender, stirring occasionally.
    10-To serve, spoon into shallow vegetable dish.
    11-Sprinkle with parsley.
