1 1/2c. rice flour
1/3c. potato starch
1/3 c. tapioca starch
1 tsp xanthum gum
ABOVE EQUALS 2 CUPS AP FLOUR
1/4 c. honey or brown sugar
1 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
3 eggs, separated
2 c. buttermilk
1/2 c butter, melted
1 tsp vanilla
In a large bowl, mix together flour(s), baking soda, baking powder, salt. Set Aside. In a medium bowl, beat the egg whites until stiff, but not dry. In another bowl, whisk together egg yolks, buttermilk, butter, honey and vanilla. Pour into dry ingredients and stir briefly until just combined. Fold whites into batter. Pour batter onto waffle baker.
makes 3 1/2 c batter, about 12 waffles
