Aaahh Lecithin. I used to put it in my protein shakes in the early 80s. Its a phospholipid which are important precursors to neurotransmitters.
Pitfalls: extremely fragile...everyone complains about its taste...probably because 99.9% is rancid. Extracted with hexane...not good. Majority is from soy...no.
That is one reason I consider eggs a perfect food--they contain a great deal of lecithin--which emulsifies the cholesterol.
EAT SOME EGGS instead!
