
creamy lime popsicles
Abandoning prepackaged snacks may be, for many of us, the most challenging aspect of change to a diet of whole unprocessed food! That cherished daily Snickers bar or bag of Cheetos (speaking for my family) is soooo hard to give up. But when eating nutritious homemade meals, I have found that I am far less hungry for snacks than I used to be. When I do get hungry, having a snack like one of the following makes me feel amazing.
Creamy Lime Popsicles
Ingredients:
- 1 can full fat coconut milk
- 1 avocado
- ½ tsp stevia powder
- ¼ cup maple syrup
- 2 tbsp lime juice
Equipment:
- Popsicle molds for 8 popsicles
- Food processor or Vitamix
- Can opener
- Knife or other tool for opening avocado and removing pit
- Measuring spoons
- Measuring cups
- Medium or large funnel
How to:
Throw all the ingredients into food processor or Vitamix. Blend until very smooth. Pour through a funnel into the molds and freeze until set.
