Baked Delicata Squash
- 2 medium sized delicata squash
- 4 tbsp butter, ghee or cold pressed coconut oil
- Maple syrup
- Salt and pepper to taste
- Large knife
- Cutting board
- 9×12 glass baking pan
- Corningware, ceramic or glass serving dish
Preheat oven to 400 degrees. Cut the stem off the end of each squash. Cut squashes in half lengthwise. Scoop out and discard the innards. Arrange face down in the baking pan. Fill pan one half inch deep with water and set in the hot oven. Bake for 30 minutes or until squash is tender. Remove each half with tongs. Scoop flesh out into serving dish. Mash with butter, then drizzle with maple syrup to taste and sprinkle with salt and pepper. Mix and serve.
