Mexican Fried Rice
Ingredients
2 Tablespoons oil
1 cup uncooked rice
1 clove garlic, minced
1/2 cup finely sliced green onion
2/3 cup chopped canned chili peppers
1/2 cup diced fresh tomatoes
2 cup chicken broth
Directions
1 Heat oil in heavy skillet over medium-high heat.
2 Add rice and saute', stirring constantly, until golden brown.
3 Add remaining ingredients.
4 Cover and simmer 30 minutes, or until rice is tender and liquid is absorbed.
MAKES 6 servings

you have answered all of my wishes with this one!
what kind of chili peppers does it call for specifically if any? Maybe just a jalapeno, dusted with a little cayenne pepper. Either way, this is something I need to experiment with!

I saw no designation on what chili....except 'canned'. My advise is if you want to try something and it works to your liking, please share. Your 'changes' might be even better. Enjoy and Bon Apitite'
