    Walnut Shortbread

    Ingredients
    1 cup butter or margarine, softened
    3/4 cup sifted confectioners' sugar
    1-1/2 teaspoons freshly grated lemon peel
    1/2 teaspoon vanilla
    1/2 teaspoon salt
    2 cups flour
    1 cup ground walnuts

    Directions
    1 In mixer bowl, beat butter and confectioners' sugar.
    2 When creamy, beat in lemon peel, vanilla, and salt.
    3 Combine flour and ground walnuts; stir into butter mixture, combining thoroughly.
    4 Press dough evenly into an ungreased 10x15-inch jelly roll pan.
    5 Bake in a preheated 325-degree oven for 25 to 30 minutes just until shortbread begins
    to brown.
    6 Cut into 2-inch squares while warm.
    7 Remove to racks to cool completely.
    8 Store in airtight container.

    MAKES 3 dozen squares
