    Vegetable Rice Creole

    Ingredients
    1 cup uncooked rice
    1/2 cup diced celery
    1/3 cup sliced onion
    1 Tablespoon oil
    2-1/2 cups canned tomatoes
    1 teaspoon chopped sweet basil
    1/2 teaspoon rosemary
    1 teaspoon celery flakes
    2 cups canned peas
    1/2 cup canned kidney beans

    Directions
    1 Cook rice according to package directions.
    2 Cook celery and onions in oil until tender.
    3 Add tomatoes, basil, rosemary, celery flakes, and pepper to taste.
    4 Cook 20 minutes, stirring occasionally.
    5 Add peas and kidney beans.
    6 Cover and cook 5 minutes, or until thoroughly heated.
    7 Serve over rice.

    MAKES 8 servings
