Ingredients
2 cups all-purpose flour, stirred before measuring
3 teaspoons baking powder
2 Tablespoons sugar
1/2 teaspoon salt
1 egg
1 cup milk
1/4 cup cooking oil
4 Tablespoons jelly (any flavor)
Directions
1 Preheat oven to 425 degrees.
2 Grease twelve 2-1/2- to 3-inch muffin pan cups.
3 Sift together flour, baking powder, sugar, and salt.
4 Beat together egg, milk, and oil.
5 Make a well in center of flour mixture.
6 Pour in milk mixture.
7 Stir quickly until batter is mixed but still lumpy on center.
8 Fill muffin cups 1/2 full.
9 Drop 1/3 Tablespoon jelly in center of each muffin.
10 Add more batter to fill cups 2/3 full.
11 Bake 25 minutes, or until lightly browned.
