    Two-Bean Salad with Mustard Dressing

    Ingredients
    3 cups frozen mixed vegetables
    2 ribs celery, sliced
    1/2 green bell pepper, diced
    1 medium onion, chopped
    15-ounce can red beans, rinsed and drained
    15-ounce can garbanzo beans, drained
    1/2 cup sugar
    1 Tablespoon flour
    1 Tablespoon prepared mustard
    1/2 cup cider vinegar

    Directions
    1 Cook frozen vegetables in lightly salted boiling water until crisp-tender.
    2 Drain well.
    3 Mix in celery, green pepper, onion, and both drained beans.
    4 Turn mixture into a refrigerator container with a tightly fitting lid.
    5 Mix sugar and flour in a small, heavy saucepan.
    6 Blend in mustard and vinegar gradually, stirring out lumps.
    7 Bring to a boil, stirring; reduce heat and continue cooking and stirring until mixture is thick and a translucent gold color.
    8 Pour over vegetable mixture.
    9 Stir well, cover tightly and chill.

    MAKES 8 servings
