    Tuna-Rice Salad

    Ingredients
    1-1/4 cups converted rice
    1 medium red bell pepper, diced
    7-ounce can tuna, drained and flaked
    1/4 cup chopped onion
    1/2 cup mayonnaise
    3 Tablespoons capers, rinsed and drained
    1 Tablespoon lemon juice
    1/2 teaspoon grated lemon peel
    White pepper to taste

    Directions
    1 Cook rice according to package directions.
    2 Transfer to large bowl; cool to room temperature.
    3 Add red pepper, tuna, and onion.
    4 Stir together remaining ingredients; add to salad, mixing well.
    5 Chill.

    MAKES 6 servings
