Ingredients
4 medium tomatoes, seeded and cubed
2 cups Italian bread cubes OR croutons
1-1/2 cups shredded mozzarella cheese
3 Tablespoons olive oil
2 Tablespoons chopped fresh basil leaves
1 Tablespoon balsamic OR red wine vinegar
1/2 teaspoon salt
1/4 teaspoon freshly
ground black pepper
Directions
1 Combine tomatoes, bread cubes, and cheese in medium bowl.
2 Add oil, basil, vinegar, salt, and pepper; toss lightly.
3 Cover and refrigerate 2 to 3 hours before serving.
MAKES 4 to 6 servings
