    Texas-Style Chili

    Ingredients
    4 pounds coarsely ground beef
    1 large onion, chopped
    2 cloves garlic, crushed
    1 teaspoon oregano
    1 teaspoon ground cumin seed
    6 teaspoons chili powder, or to taste
    1-1/2 cups canned whole tomatoes
    2 to 6 dashes hot pepper sauce
    2 cups hot water

    Directions
    1 Saute' meat, onion and garlic in large skillet until lightly browned.
    2 Add remaining ingredients.
    3 Add salt, if desired.
    4 Bring to a boil.
    5 Lower heat and simmer about 1 hour.
    6 Skim off fat from time to time while cooking.

    MAKES 10 to 12 servings
