    Texas Rice and Bean Skillet

    Ingredients
    1 large onion, chopped
    1 pound ground beef
    3 cups water
    1 cup converted rice
    1 teaspoon salt
    1-1/4-ounce package chili seasoning mix
    8-ounce can tomato sauce
    15-ounce can kidney beans, drained
    1 large green pepper, chopped

    Directions
    1 Cook onion and ground beef in Dutch oven or 12-inch skillet until meat is lightly browned.
    2 Drain excess fat.
    3 Add water, salt, seasoning mix, tomato sauce, rice, and beans.
    4 Bring to a boil.
    5 Reduce heat.
    6 Cover tightly and simmer 20 minutes, stirring occasionally.
    7 Remove from heat.
    8 Stir in green pepper.
    9 Cover and let stand 5 minutes or until most liquid is absorbed.

    MAKES 6 servings
